"Creating the new Cane Fire Grille lunch and dinner menus was an exciting prospect," continued Valderama. "We have many Peruvian ingredients and dishes, like Peruvian Shrimp cocktail, and we elevate other popular Latin favorites like nachos by topping them with our unctuous Short Ribs, which have been braised for hours in a deep cilantro based stock," noted Valderrama. "But my personal favorite is our Pork Empanizado. Anyone from Central or South America, and even the Caribbean, could fall into this dish like a child falls into their mothers loving arms."

"Then all that is topped with a perfectly fried quail egg, and we garnish with our famous Onion Slaw, which is red onion pickled in fresh lime juice and cilantro."
