Maharaj Mitesh Saraiya Creates Delicious, Meat-Free Dishes at Courtyard Ahmedabad

AHMEDABAD, INDIA -- (Marketwired) -- Jun 15, 2015 -- When it comes to vegetarian cuisine, one might say that Guajaratis are the experts. At Shakahari, the specialty vegetarian restaurant at Courtyard Ahmedabad, diners can experience that expertise with its latest addition: a traditional Gujarati thali.

"While we are part of one of the largest hospitality brands in the world," General Manager Gaurav Singh says, "we believe in reflecting local tastes and preferences, and are proud to be able to treat our hotel guests and Ahmedabad locals to an authentic, five-star meal."

The mastermind behind the newest offering is Maharaj Mitesh Saraiya, the man behind well-known Gujarati restaurants including Vishala, Ame Guajarati and Chokhi Dhaani. "Gujarati cuisine is a colourful palette of diverse flavours and ingredients that includes some of the widest assortments in the vegetarian cooking," Saraiya says.

He used that palette to create a menu of mouthwatering delicacies for this Ahmedabad restaurant, which include: undhiyu (mixed vegetable curry), puris (deep-friend Indian bread), rasawala bataka (potato curry), Gujarati bhindi (okra), dal (lentils), kadhi (curd thickened with gram flour), khaman dhokla (savoury gram flour cake) and handwo (baked lentils, rice and sesame), along with desserts such as sukhadi (wheat, cane sugar and ghee), mohanthal (sweetened gram flour fudge), mang no halwo (dense mung bean "pudding"), magaj ke ladoo (flour, dough and sugar balls), gulabpak (rose petal sweet) and urdiapak (black gram flour sweet).

In addition to the traditional Gujarati dishes, Shakahari also offers Hyderabadi- and Awadhi-influenced vegetarian dishes such as paneer hara pyaz (cottage cheese cooked in onion and tomato), methi matar malai (green peas flavoured with fenugreek and finished with cream), and gulab ki kheer (basmati rice pudding cooked in rose milk and finished with candied rose petal confit).

Shakahari offers a beautifully designed space that's perfect for a special celebration, private client meeting or family meal, and the culinary team is also behind the delectable catering for weddings and events held at the Ahmedabad hotel.
