Westchester Marriott Restaurant Presents Tantalizing 'Farm to Fork' Dining

TARRYTOWN, NY -- (Marketwired) -- Jun 04, 2013 -- Focusing on Tarrytown's strong agricultural heritage, Cooper's Mill, a new restaurant in Westchester, N.Y. opened its doors on May 30 offering its guests a uniquely authentic take on "farm to fork" dining in the Lower Hudson Valley.

With a name reminiscent of the area's 1886 flour mill, the new Cooper's Mill Restaurant pays tribute to decades of rich history not only through its name and farm fresh selection of ingredients, but through the ambience created with the natural look of antique barn wood contrasted throughout the establishment with an open "industrial" décor portrayed in the ceilings and surrounding spaces.

Located inside the Westchester Marriott hotel, the restaurant's stylish interior designs and diverse menu options are sure to be a hit with locals and area visitors, alike. While Kraig Kalashian, principal at Kraig Kalashian Architecture & Design in Chester, NJ spent two years planning and designing the restaurant, the menu comes from the heart and soul of Chef Iain Falconer, who most recently served as chef at the popular and well-regarded Sweet Grass Grill in Tarrytown.

"The Hudson Valley offers an amazing array of fresh foods and we're dedicated to bringing them to their fullest potential here at Cooper's Mill," said Falconer, a native of Scotland, who also has experience as a sous chef at Todd English's Olives in Manhattan. "We spent a great deal of time planning our menu approaches."

Also seeking to combine traditions of the area with contemporary tastes, Chef Iain and his team focused their efforts on utilizing the abundance of produce available in the Hudson Valley.

"We set out to strike the right balance between tradition and today, always with the focus on the bounty of the Hudson Valley region," said Chef Iain. "It's a fantastic space that's been created and we believe we have the food and beverage offerings to match."

Nestled inside the Marriott's impressive Westchester hotel at 670 White Plains Road (Route 119) in Tarrytown, the new restaurant's menu features everything from five signature flat breads prepared on a wood-burning stove to a 20-ounce grilled rib eye served with broccoli rabe and wild mushroom butter. Fresh vegetables and basic sandwiches featuring artisanal and specialty ingredients are also included on the menu along with other meats and seafood sourced from local purveyors.

"Cooper's Mill blends so many of my favorite culinary concepts and cuisines into a single menu," said Chef Iain Falconer. "Our guests will have a wide variety of choices to sample -- this menu will bring them back, again and again!"
