The search is on to find Australia’s real kitchen heroes.

Apprentice chefs across Australia and New Zealand are being encouraged to apply for the culinary experience of a lifetime in Fonterra Foodservice’s Proud to be a Chef competition.

The competition is designed to publicly recognise and reward the dedication and commitment of apprentice chefs, giving them the opportunity to experience hands-on mentoring in master classes led by industry experts like Adam D’Sylva, executive chef and co-owner of Coda Bar and Restaurant.

Applications are open now until October 31st.

Thirty finalists will be flown to Melbourne for three days where they will take part in the master classes and be wined and dined at award winning Melbourne restaurants.

Additionally, one standout apprentice will receive the major prize of an international culinary scholarship, tailored to their individual aspirations as a professional chef.

Keryn van Kempen of Mooloolaba Queensland, winner of the 2011 Proud to be a Chef competition, says the program was a critical stepping stone in her career.

“The advice I received during the Fonterra Foodservice Proud to be a Chef competition was priceless – I was given invaluable insights into the industry and learned skills and techniques that I will carry with me forever,” she said.

Industry greats such as George Calombaris, Master Chef judge and owner of The Press Club and Matthew Macartney, executive chef at Chateau Yering are just two of the competition’s alumni.

Applicants are evaluated on their demonstrated passion for food servicing as well as their aspirations, goals and commitment to chefing, and an original recipe submission.

Entries for 2012 are now open and all passionate apprentice chefs in Australia and New Zealand are encouraged to enter via the Fonterra Foodservice Proud to be a Chef Facebook page, www.facebook.com/proudtobeachef.

Entry is open to apprentice chefs aged 18 and above, enrolled in a culinary course anywhere in Australia or New Zealand as at 27 February 2012. Participants must also be Australian or New Zealand citizens or hold an eligible Australian or New Zealand work visa. Entries close on Monday 31st October, 2011.
